Paleo Pita Bread with Avocado Nuts Filling (Vegan)

Paleo Pita Bread with Avocado Nuts Filling (Vegan)

Serves: 2 (with extra pitas for a later date)



Pitta Bread

  • 120g Finely ground almonds
  • 120g Tapioca flour
  • 250ml Full fat coconut milk
  • 1 Tbsp of coconut oil


  • Handful of big nuts
  • One avocado
  • 3/4 Tbsp black olives
  • 2 Tbsp sundried tomato
  • 150g Lettuce
  • Leftover spiralized courgette
  • Drizzle of extra virgin olive oil


  1. Mix all the ingredients together in a large bowl
  2. Heat a frying pan to a hot heat with a little coconut oil and pour batter to your desired thickness
  3. Once the batter fluffs up and looks firm, flip it over to cook the other side
  4. Repeat the process. The smaller you make the pita, the quicker they will cook
  5. Once the pitas are complete, move onto your filling. This can be absolutely anything you want.
  6. We choose our Big Nuts, chopped avocado, prepared sun-dried tomatoes and halved black olives with salad and with a healthy drizzle of extra virgin olive oil
  7. Enjoy!
