Asian Inspired Quick Superfood Chicken Salad


Asian Inspired Quick Superfood Chicken Salad - Packed with protein, fibre and essential fats, nuts are one of this season's best buys. A golf ball-sized portion (about 30g) of unsalted nuts makes a vitality-boosting snack and, unlike most other options, contributes a mix of valuable vitamins and minerals. All nuts have different nutrition credentials and will offer various health benefits, therefore, buying them mixed is the best in order to maximise your nutrient return! We've added them to this Asian Inspired Quick Superfood Chicken Salad to make them super tasty.

Finally, this recipe has a cheeky secret. Everything can be prepared in advance and kept in separate tuber ware so that you can make this in 5 seconds tops. We also didn't show any sauces or condiments in the pictures as we would recommend your favourite of course ! We have suggested a healthy take on a traditional Asian flavour but anything really does go !

  • Handful of washed Kale
  • Spiralised courgette
  • Couple of radishes, sliced
  • Half a bell pepper, sliced
  • 113g cooked chicken breast, sliced
  • Handful of Mixed Big Nuts



  1. Very simply, prepare the ingredients as instructed above and then assembled into a bowl of your choice.
  2. Add your favourite sauce and enjoy! 

Recommended Asian Sauce

  • 1 tbsp coconut oil
  • 1 tsp grated garlic 
  • 1 tbsp grated ginger
  • 1 tsp chopped chilli
  • Juice of ½ lime.
  • 2 tbsp fish sauce
  • 1½ tbsp honey
  • 1 tsp sesame oil
  • 1 ¼ teaspoon salt


Mix in a small bowl and drizzle liberally on your salad!
